Step by Step Method
Step 1
Mix oil and butter
Step 2
Add onions and shallot, saute until soft.

Step 4
Cook until rice puffs little.
Step 5
Add stock, mushroom and pumpkin;

Cook 50 minutes covered on low.
Step 7
(you may need to add more water cover simmer 5 minutes until rice is done).
Step 8
Leave off heat 5 minutes covered season to taste
