Ingredients

The ingredients are:
  • 3 tablespoons butter
  • 1 shallot, minced
  • 80 grams wild rice (dry, 1/2 cup)
  • 340 grams dry brown rice (dry, 1 1/2 cups)
  • 5 cup vegetable stock
  • 1 cup pumpkin, cubed small
  • 2 tablespoons oil
  • 1/2 cup mushrooms, chopped
  • 1/2 cup yellow onion, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper

How to Make

  • Step 1: Mix oil and butter

  • Step 2: Add onions and shallot, saute until soft.

  • Step 3: Add both rices

  • Step 4: Cook until rice puffs little.

  • Step 5: Add stock, mushroom and pumpkin;

  • Step 6: Cook 50 minutes covered on low.

  • Step 7: (you may need to add more water cover simmer 5 minutes until rice is done).

  • Step 8: Leave off heat 5 minutes covered season to taste
