Step 1: Mix oil and butter
Step 2: Add onions and shallot, saute until soft.
Step 3: Add both rices
Step 4: Cook until rice puffs little.
Step 5: Add stock, mushroom and pumpkin;
Step 6: Cook 50 minutes covered on low.
Step 7: (you may need to add more water cover simmer 5 minutes until rice is done).
Step 8: Leave off heat 5 minutes covered season to taste
