Step by Step Method

Step 1

Peel ,or scrub and slice the potatoes on a mandoline julienned fine

Place potato sticks in a large bowl of ice water to remove excess starches.

Heat oil in a large, deep skillet to 350F.

Step 5

Dry potatoes and deep-fry them

Step 6

One cup at-a-time in stages until they turn golden brown.

Step 7

Dont do more than this or the oil will foam up and cause a big danger

Step 8

Transfer potatoes to a cookie sheet and keep warm in oven until your done

Step 9

And season after you blotted with paper towels to remove excess grease
