Step 2: Place potato sticks in a large bowl of ice water to remove excess starches.
Step 3: Preheat oven to 300 degrees
Step 4: Heat oil in a large, deep skillet to 350F.
Step 5: Dry potatoes and deep-fry them
Step 6: One cup at-a-time in stages until they turn golden brown.
Step 7: Dont do more than this or the oil will foam up and cause a big danger
Step 8: Transfer potatoes to a cookie sheet and keep warm in oven until your done
Step 9: And season after you blotted with paper towels to remove excess grease
