Step by Step Method

Step 1

Using a mortar and pestle pound the pistachios until they are ground about as fine as breadcrumbs. (If you don't hav a mortar and pestle you can place the pistachios in a zip lock bag and freeze them and then smash them with a rolling pin. Transfer the ground pistachios to a small bowl and add the next 7 ingredients (-salt and pepper); mix well and then set aside.

Step 2

Pat the fish dry with paper towels and season worth salt and pepper and then run in the cumin. Dust fish with flour.

Step 3

In a frying pan over medium heat add the oil and then when oil is hot place fish in the pan, skin side down and fry for 3-5 minutes and then flip fish and cook for another one or so. Transfer fish to paper toweling to soak up oil and then serve with the prepared sauce.

I could eat that topping with a spoon! This dish is so, so good! I used a simple piece of frozen halibut, which was a little too thin. This would probably be great with a piece of snapper or even some cod. I loved the hint of cumin on the fish ( I did mix the cumin with the flour and dredged it that way). And the sauce... oh my goodness! This is company worthy and going into my Best of 2023 list. Thanks for sharing this easy and delicious keeper!
