"We love this potato salad and I sometimes add in some chopped bacon. If your wondering what cornichons are, they are small pickled gherkins that have a sweet and sour taste, you'll find them in most large markets in the pickles and condiments section. Serve this salad right after mixing. This makes a smaller amount you can double all ingredients to serve more"

Step by Step Method
Step 1
Don't allow the potatoes to cool too much before starting this recipe. In a large bowl, whisk together the dressing ingredients.
Step 2
Mix the slightly warm potatoes with red bell pepper, celery, chopped cornichons and green onions, then mix in the dressing until combined. (potatoes should be slightly when mixed with the dressing, this will allow them to absorb the flavor of the dressing.) Season with salt and pepper to your liking.
Step 3
Serve warm.
