Step by Step Method

Preheat the grill to medium heat.

In a large bowl, combine the sweet potato, zucchini, squash, onion, bell pepper, and minced garlic.

Drizzle the olive oil over the vegetables and toss to coat them evenly.

Sprinkle the dried thyme, dried oregano, salt, and pepper over the vegetables and toss again to ensure they are well seasoned.

Lay out two large pieces of aluminum foil. Divide the vegetable mixture evenly among the foil pieces.

Fold the foil over the vegetables and seal the edges to create tightly sealed packets.

Place the grill packets on the preheated grill and cook for 10-15 minutes, or until the vegetables are tender, flipping the packets halfway through the cooking time.

Carefully remove the grill packets from the heat and let them cool for a few minutes.

Open the packets, being cautious of the hot steam, and transfer the grilled vegetables to a serving dish.

Garnish with fresh chopped parsley.
