How to Make

  • Step 1: Preheat the grill to medium heat.

  • Step 2: In a large bowl, combine the sweet potato, zucchini, squash, onion, bell pepper, and minced garlic.

  • Step 4: Sprinkle the dried thyme, dried oregano, salt, and pepper over the vegetables and toss again to ensure they are well seasoned.

  • Step 6: Fold the foil over the vegetables and seal the edges to create tightly sealed packets.

  • Step 7: Place the grill packets on the preheated grill and cook for 10-15 minutes, or until the vegetables are tender, flipping the packets halfway through the cooking time.

  • Step 8: Carefully remove the grill packets from the heat and let them cool for a few minutes.

  • Step 9: Open the packets, being cautious of the hot steam, and transfer the grilled vegetables to a serving dish.

  • Step 10: Garnish with fresh chopped parsley.
