"A very old recipe that makes the most delicious flat, crisp cookies. Recipe uses baker's ammonia, which was common before the advent of baking powder. The flavor of these cookies is so pure, without the bite of the baking powder. Makes 36 small cookies. Adapted from King Arthur's Flour website."

Step by Step Method

Step 1

Preheat oven to 300 degrees and lightly grease two baking sheets.

Step 2

Cream butter, sugar, salt and vanilla. Whisk baker's ammonia into flour and add to creamed mixture, beating up to 5 minutes, until the dough comes together. (It will seem dry at first, but it will eventually clump and become cohesive.)

Step 3

Break off pieces of dough about the size of a gumball. Roll into balls, then roll in coarse sugar. Put on baking sheet and use the bottom of a glass to flatten them about 1/4" thick.

Step 4

Bake the cookies 25-30 minutes, until they are light golden brown around the edges. The cookies may smell like ammonia while cooking, but once they've cooled they won't smell or taste like ammonia. That only happened for me when my baker's ammonia was first opened, the smell seems to have evaporated since then.

Step 5

Remove from oven and transfer cookies to a rack to cool.
