Step by Step Method

Step 1

Preheat oven to 200C.

Step 2

Cut the potatoes into fat chips and place in a pot of boiling water for 5 minutes to blanch and then drain well into a colander and then transfer to a large bowl and toss in the olive oil, paprika and salt and coat the potatoes and then place on a baking tray and place in the oven for 20 minutes.

Step 3

Cut the fish into two or three portions, toss in the rice flour and second lot of paprika, and then dip in the egg and then pressed into the lupin flakes that have been tossed with the second lot of olive oil.

Step 4

Turn the chips over and add the lupin-coated fish on another tray and bake for a further 10 to 15 minutes or until crispy and browned.

Step 5

Suggested you serve with mayonnaise mixed with chopped green olives and capers.
