Step by Step Method

1/3 cup of cheddar cheese - grated

1.Wash the potatoes and bake or microwave until cooked through, set aside to cool.

2. fry the bacon its reasonably crisp and crumble.

3. Dice the rest and saute in the butter in a saucepan for a couple of minutes

3. you can literally use anything you like from bits of cold meat, through to cooked asparagus.

4. Cut the potatoes in half, carefully scoop out the inside, going close to the skin but without cutting through.

5. Mash the potatoes and add the seasoning, a dash of milk and add all other ingredients and stir with a fork until well mixed then

6. Carefully place the mash back into the skins adding the extra cheese over the top Heat in a hot oven for about 20 minutes, covered with foil, or in the Microwave on medium for about 7-10 minutes.
