Step 1: 1/3 cup of cheddar cheese - grated

Step 6: 1.Wash the potatoes and bake or microwave until cooked through, set aside to cool.
Step 7: 2. fry the bacon its reasonably crisp and crumble.
Step 8: 3. Dice the rest and saute in the butter in a saucepan for a couple of minutes
Step 9: 3. you can literally use anything you like from bits of cold meat, through to cooked asparagus.
Step 10: The choice is yours.
Step 11: 4. Cut the potatoes in half, carefully scoop out the inside, going close to the skin but without cutting through.
Step 12: 5. Mash the potatoes and add the seasoning, a dash of milk and add all other ingredients and stir with a fork until well mixed then
Step 13: 6. Carefully place the mash back into the skins adding the extra cheese over the top Heat in a hot oven for about 20 minutes, covered with foil, or in the Microwave on medium for about 7-10 minutes.

Step 15: Serve Hot. Goes well with salads at Barbecues, buffets or with lasagne, cannelloni, cold meats and salads.
