Ingredients

The ingredients are:
  • 6 potatoes, medium
  • 12 tablespoon of butter
  • 1 small onion - small dice
  • 1 small stick of celery or part
  • 1⁄2 cup bacon, crispy
  • 1⁄3 cup capsicum, red
  • 1⁄2 cup  cheddar cheese, grated (optional)
  • Parsley, chopped (optional)
  • Seasoning
  • 1 - 2 tablespoons of milk
  • 1/3 cup of cheddar cheese - grated

  • Step 6: 1.Wash the potatoes and bake or microwave until cooked through, set aside to cool.

  • Step 7: 2. fry the bacon its reasonably crisp and crumble.

  • Step 8: 3. Dice the rest and saute in the butter in a saucepan for a couple of minutes

  • Step 9: 3. you can literally use anything you like from bits of cold meat, through to cooked asparagus.

  • Step 13: 6. Carefully place the mash back into the skins adding the extra cheese over the top Heat in a hot oven for about 20 minutes, covered with foil, or in the Microwave on medium for about 7-10 minutes.
