"This is a recipe I make every time I cook a turkey. It freezes very well and is great for soup bases and for gravy. When quartering the onion, leave the skin on, it gives the broth a more golden color."

Step by Step Method

Step 1

In large stockpot, bring all ingredients to a boil, reduce heat to medium-low and simmer for 3 to 4 hours, or until liquid has decreased to about half.

Step 2

Strain, reserving stock. Season with additional salt and pepper if needed.

Step 3

Store in airtight containers.
