"I love this salad, I make it all the time even in cold weather, this salad is good anytime of the year and you could use cooked chicken instead of tuna, when I make it with chicken I only use grilled chicken breast"

Step by Step Method

Step 1

Cook the tortellini according to package directions; drain. Plunge into ice water to stop the cooking process; drain and place in large bowl. Stir in drained tuna and next 6 ingredients.

Step 2

Whisk together all dressing ingredients until smooth. Pour over tortellini mixture, tossing to coat. Stir in salt and pepper to taste. Cover and chill at least 25 minutes.

Step 3

Before serving mix in some Parmesan cheese.

Delicious salad and we will have it many more times. Super fabulous flavors and the dressing sure made this salad! 5 big ones for this one!

This is absolutely fantastic! Because I was serving it as a main dish, I added some halved grape tomatoes, some kalamata olives, and an extra 5 ounce can of tuna. For some reason I interpreted the red pepper as a whole red bell pepper, which worked well (although next time I'll use the roasted). I was a little leery of the dressing, but wow! We both went back for seconds and ate almost half of it. Definitely a keeper, and a perfect meal on a hot day!
