Ingredients

The ingredients are:
  • 1 package (19 to 20 ounce) cheese tortellini (frozen)
  • 1 can (12 ounce) albacore tuna (drained and flaked)
  • 2 celery ribs (diced)
  • 1/3 cup sliced green olives
  • 1/3 cup sliced black olives
  • Roasted red pepper (from the jar, 1/2 of a pepper, chopped)
  • 1/3 cup chopped red onion
  • 3 to 4 tablespoons chopped fresh parsley
  • Parmesan cheese (added at the end)
  • Pepper
  • DRESSING
  • 1/3 cup mayonnaise
  • 1/3 cup oil (vegetable oil)
  • 2 garlic cloves, minced
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoon red wine vinegar
  • 1 1/2 teaspoons dried Italian seasoning
  • 1 teaspoon salt

How to Make

  • Step 1: Cook the tortellini according to package directions; drain. Plunge into ice water to stop the cooking process; drain and place in large bowl. Stir in drained tuna and next 6 ingredients.

  • Step 2: Whisk together all dressing ingredients until smooth. Pour over tortellini mixture, tossing to coat. Stir in salt and pepper to taste. Cover and chill at least 25 minutes.

  • Step 3: Before serving mix in some Parmesan cheese.
