Step by Step Method
Step 1
Fry bacon until crisp in large stock pot.
Step 2
Remove bacon and add butter, onion and celery cook until translucent.
Step 3
Add garlic, paprika and flour.
Step 4
(If using wine deglaze here).
Step 5
Add stock and juice.
Step 6
Add potatoes, herbs and seasoning to taste.
Step 7
Simmer 30 minutes.
Step 8
Add milk and clams.
Step 9
Simmer 20 minutes.
Step 10
Add cream and sour cream with flour mixed in.
Step 11
Season to taste.
Step 12
Simmer until thickened.
