Ingredients

The ingredients are:
  • 3 ounces hardwood smoked bacon
  • 3 tablespoons butter
  • 1/4 cup red onion, minced
  • 2 stalks celery, minced
  • 1 clove garlic, smashed
  • 1/2 teaspoon hot paprika
  • 3 tablespoons flour
  • 4 cups vegetable stock
  • 8 ounces (1 bottle) clam juice
  • 2 pounds red potatoes, unpeeled, chopped
  • 6 ounces (1 can) baby clams, undrained
  • 15 ounces (1 can) minced clams, undrained
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon tabasco sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups milk
  • 4 ounces sour cream
  • 1 tablespoon flour
  • 4 ounces heavy cream

How to Make

  • Step 1: Fry bacon until crisp in large stock pot.

  • Step 2: Remove bacon and add butter, onion and celery cook until translucent.

  • Step 3: Add garlic, paprika and flour.

  • Step 4: (If using wine deglaze here).

  • Step 5: Add stock and juice.

  • Step 6: Add potatoes, herbs and seasoning to taste.

  • Step 7: Simmer 30 minutes.

  • Step 8: Add milk and clams.

  • Step 9: Simmer 20 minutes.

  • Step 10: Add cream and sour cream with flour mixed in.

  • Step 11: Season to taste.

  • Step 12: Simmer until thickened.
