Step 1: Fry bacon until crisp in large stock pot.
Step 2: Remove bacon and add butter, onion and celery cook until translucent.
Step 3: Add garlic, paprika and flour.
Step 4: (If using wine deglaze here).
Step 5: Add stock and juice.
Step 6: Add potatoes, herbs and seasoning to taste.
Step 7: Simmer 30 minutes.
Step 8: Add milk and clams.
Step 9: Simmer 20 minutes.
Step 10: Add cream and sour cream with flour mixed in.
Step 11: Season to taste.
Step 12: Simmer until thickened.
