"Named after a fishing port at the northern tip of Denmark, Toast Skagen is typically served as a starter at Swedish dinner parties. Toast Skagen is an elegant combination of prawns and other ingredients on a small piece of sautéed bread. When you really want to celebrate something, be extravagantly generous with the whitefish roe. The sprig of dill on the top serves as a fanfare."

  • When selecting the bread for this recipe, it is best to use white bread that is slightly stale so it will hold up to the sautéing.
  • When selecting the shrimp, make sure to choose cooked shrimp that is already peeled and deveined.

  • Substitute the whitefish roe with smoked salmon: This substitution is great for those looking to add a smoky flavor to the dish. The texture and flavor of the smoked salmon will also add an interesting contrast to the dish.
  • Substitute the mayonnaise with Greek yogurt: This substitution is a healthier option as Greek yogurt is lower in fat and calories than mayonnaise. It also adds a creamy texture and a mild tangy flavor to the dish.

Shape the whitefish roe like eggs and place on top of the smoked salmon mixture. Garnish each with a sprig of dill and serve with a slice of lemon.

Swedish Potato Salad - This classic Swedish potato salad is a perfect accompaniment to Toast Skagen. It is made with potatoes, onions, and a creamy mayonnaise-sour cream dressing. The addition of fresh herbs like dill and parsley adds a nice flavor to the salad, making it a great complement to the Toast Skagen's seafood flavors.

Swedish Meatballs - Swedish meatballs are a classic dish that pairs perfectly with the Swedish potato salad. Made with ground beef, pork, and spices, these meatballs are simmered in a creamy gravy and served over boiled potatoes.
