Step by Step Method
Step 1
Heat the oil in a soup pot.
Step 2
Add the onion and sauté until translucent.
Step 3
Add the garlic and continue to sauté until the onion is golden.

Add the squash and all the remaining ingredients except the parsley and cilantro ,
Step 5
And bring to a simmer.
Step 6
Simmer gently, covered, until all the vegetables are tender, about 20 to 25 minutes.

Season to taste with salt and pepper.

If time allows,

Let the stew stand for 1 to 2 hours before serving,
Step 10
Then heat through as needed.
Step 11
Just before serving, stir in the cilantro and parsley
Step 12
The stew should be thick and very moist but not soupy;
Step 13
Add additional stock or water if needed.
Step 14
Adjust seasonings to your liking.
