Step by Step Method

Step 1

Combine lentils,barley and beef broth in a large stock pot or dutch oven. Bring mixture to a boil,then reduce heat and simmer for 30 minutes

Step 2

Place ground beef into a large frying pan and place over medium heat. Cook and stir until juices run clear

Step 3

Add beef and onion,carrots, celery,garlic,tomatoes and remaining ingredients to the stock pot.Break up tomatoes with a wooden spoon.

Step 4

Bring to a boil, turn down heat and simmer, stirring occasionally, for 20 to 30 minutes or until vegetables are tender and soup has thickened.

Step 5

Remove bay leaf and serve

This is a hearty soup I do like it though the  longer after eating the more I want more hmmm. but It must wait for several days to see If it will meet my standards for a good soup as I live alone soup must not thicken nor loose its flavor after several days. Though I am sure I will have to add water in tomorrow as barley does absorb water on siting. All in all a good soup. I added 1/2 cup extra broth as I halved recipe and thought it might be neaded in coooking. I only used 1/4 of the meat or 1/2 of the 1/2 meat required. I don't know what kind of lentils I have they look brownish green not either color but that is what I used next time I will buy red and see what that tastes like. But that will have to wait until my bi-weekly guess it is bi-monthly I go once every two weeks I don't go till next week but wanted to try this soup. I probably used more cayenne than called for but I like things with a twang though could not taste that even with the amount I put in

We love this soup! Thick and hearty and very satisfying with wonderful old fashioned flavour. Healthy too! Made as posted and wouldn't change a thing.Thank you for another of your great recipes to add to our family favourites cookbook.
