Step by Step Method

Step 1

Combine the lemon slices and simple syrup in a cocktail shaker. Muddle well with a muddler (or the end a wooden spoon).

Step 2

Fill the cocktail shaker halfway full with ice cubes. Add the rum and shake well.

Step 3

Add a few ice cubes to each of 4 wine glasses or goblets. Strain over ice.

Step 4

Top off each glass with 2 ounces of red wine. Stir briefly, but seriously. Garnish with the lemon slices and serve.

NOTE: Lemon wheels are achieved by cutting slices and then slicing up to the the center of the slice. Fit the cut end onto top rim of glass as a garnish


FOR THE SIMPLE SYRUP


Step 5

Combine the water and sugar in a medium-size saucepan. Bring the mixture to a boil over medium-high heat, stirring occasionally.

Step 6

Lower the heat a bit, keeping the mixture at a low boil for 3-4 minutes.

Step 7

Turn off the heat and let the syrup cook completely in the pan.

Step 8

Store in a clean, airtight container in the refrigerator.

Step 9

Remainder of simple syrup that is not used can be used for another recipe. Stores well in the refrigerator.

This is a great little cocktail, FEM! Cut down to a single serving, so I used a nice cab, and a healthy shot of rum. That muddled lemon gave it a really nice flavor- and I would make this again (and again!). I also think this would make a great base for Sangria. Just adding some chopped fruit. Oh yum... think I'll go have another...
