"I originally found this idea at an Australian food website, but that recipe was a no-meat version & not what I wanted. So I searched & found this by Corey at familyfreshmealsdotcom. It's such an easy quick-fix & ingredient-friendly creative idea, it's sure to appeal to both adults & children, it can be made as a casserole or in individual servings set up like a "Tacho Bar", it's portable for picnic/potluck occasions, it's ideal for a weeknight evening meal & it's easily customized to personal preferences. It ticked all my boxes & only required adding avocado (a must for me). ENJOY!"

  • When selecting the ground beef, try to get a very lean variety to ensure the dish is not too greasy.
  • For the cheese, choose a good melting cheese such as Monterey Jack or Cheddar.

  • Instead of ground beef, you can use ground turkey for a leaner protein option. The benefit of this substitution is that it will provide a healthier option and reduce the amount of saturated fat in the dish.
  • Instead of Monterey Jack cheese, you can use a vegan cheese alternative. The benefit of this substitution is that it will make the dish suitable for a vegan diet and provide a dairy-free option.

Vegetarian Tachos Substitute the ground beef with 1 package (12 ounces) of vegetarian crumbles. Omit the taco seasoning packet and substitute with 2 tablespoons of homemade taco seasoning. Add 1 can (15 ounces) of black beans, drained and rinsed. Proceed with the recipe as directed.

Mexican Street Corn Salad: This creamy, zesty, and crunchy side dish is the perfect accompaniment to Tater Tot Nachos. The combination of sweet corn, creamy mayonnaise, and zesty lime juice is sure to please everyone at the table.
