Step 1

Put corn and onions in a bowl.

Step 2

Beat eggs with milk, pour over corn

Step 3

Mix well and season with salt and pepper

Step 4

Mix cayenne and flour then stir into mixture

Step 5

Heat oil in a large frying pan, covering base well. Test by adding a tiny bit of batter, it should bubble immediately at the edges

Step 6

Use 2 tablespoons corn mix and fry four or five at a time, turn over when light brown and do other side. Keep warm in oven while finishing all the fritters

I'm giving it 5 stars because I think most people will love this. I personally have gotten away from fried foods, but I made this in a regular pan (wasn't non-stick) so I used a couple of tablespoons of oil so it wouldn't stick. And it made it a bit too fried flavor for me. That said, I think anyone who likes fried foods or kids will love this. Think pancakes with corn inside. I needed a little sweetness, so I liked it better with cinnamon sugar or jelly on top, but if I had used a non-stick pan and cooking spray and added some dill, it would have made a great side dish.
