Step 1: Put corn and onions in a bowl.
Step 2: Beat eggs with milk, pour over corn
Step 3: Mix well and season with salt and pepper
Step 4: Mix cayenne and flour then stir into mixture
Step 5: Heat oil in a large frying pan, covering base well. Test by adding a tiny bit of batter, it should bubble immediately at the edges
Step 6: Use 2 tablespoons corn mix and fry four or five at a time, turn over when light brown and do other side. Keep warm in oven while finishing all the fritters
