Sweet Potatoes Parmesan

"Sort of a fancy version of home fries, with sweet potatoes of course, which are more healthy for us."

Step 1

Heat oil in skillet and add rosemary and garlic. When fragrant, add potatoes, and season with salt and pepper.

Step 2

Brown potatoes over medium heat, then lower heat and cook until done, 20-25 minutes. If a few pieces are not quite done, add 1/4 cup water to skillet and stir potatoes, allowing steam to finish them up (repeat if necessary).

Step 3

Toss potatoes with Parmesan cheese and serve at once.

These are fantastic sweet potatoes! The rosemary and garlic gave them a wonderful flavor. I almost didn’t have any sweet potatoes to put in a bowl because my husband was eating them out of the skillet as they cooked, and jabbering away how good they were. He distracted me so much that I forgot to add the parmesan cheese! Bottom line, these sweet taters were super delicious, and I will be making them again…with the Parmesan!:) Thanks for posting this recipe, Sue!
