Step by Step Method
Step 1
Lightly spray an oven proof pan with olive oil , the tray should be large enough to hold the sweet potato slices in a single layer
Step 2
Place the sweet potato slices in the pan in a single layer
Step 3
Arrange the cauliflower florets evenly on top
Step 4
Season with salt & pepper to taste
Step 5
Mix together maple syrup, thyme, onion soup mix
Step 6
Garlic cloves, tomato juice & water
Step 7
Set the mixture aside
Step 8
In a large skillet brown the ground beef until no longer pink, break it up as you are cooking it so there are no lumps

Pour the Onion soup mixture over the sweet potatoes & cauliflower

Top with the browned beef

Cover the pan
Step 12
Place in pre-heated 375F oven bake for 30 minutes
Step 13
Remove cover, sprinkle with the parmesan cheese and continue baking uncovered for another 15 minutes
