Ingredients

The ingredients are:
  • 2 cups sweet potato (1 medium, sliced into 1/4" slices)
  • 1 cauliflower (small cauliflower, cut into small florets ( about 1 1/2 cups)
  • Salt & pepper, to taste
  • Olive oil, spray of
  • 1 tablespoon maple syrup (pure)
  • 1/2 teaspoon dried thyme
  • Onion soup mix (1/2 pouch)
  • 3 garlic cloves, minced
  • 1/4 cup tomato juice
  • 1/4 cup water
  • 8 ounces lean ground beef
  • 3/4 cup parmesan cheese, shredded

How to Make

  • Step 1: Lightly spray an oven proof pan with olive oil , the tray should be large enough to hold the sweet potato slices in a single layer

  • Step 2: Place the sweet potato slices in the pan in a single layer

  • Step 3: Arrange the cauliflower florets evenly on top

  • Step 4: Season with salt & pepper to taste

  • Step 5: Mix together maple syrup, thyme, onion soup mix

  • Step 6: Garlic cloves, tomato juice & water

  • Step 7: Set the mixture aside

  • Step 8: In a large skillet brown the ground beef until no longer pink, break it up as you are cooking it so there are no lumps

  • Step 9: Pour the Onion soup mixture over the sweet potatoes & cauliflower

  • Step 10: Top with the browned beef

  • Step 11: Cover the pan

  • Step 12: Place in pre-heated 375F oven bake for 30 minutes

  • Step 13: Remove cover, sprinkle with the parmesan cheese and continue baking uncovered for another 15 minutes

  • Step 14: Serve & I hope enjoy
