Step by Step Method

Step 1

Preheat oven to 400. Brown/sear chops in 1 tablespoon olive oil. Transfer to plate and keep warm.

Step 2

Deglaze the pan with the apple juice, scraping up the brown bits. (And this time I used a stainless steel skillet, so I could actually do that!!!) Bring the apple juice to a boil and then stir in the other ingredients. (Depending on the mustard you use, you may wish to add some hot sauce to taste.) Continue to cook for about 2 minutes and then return chops to the skillet.

Step 3

Finish the chops in the oven for about 8-10 more minutes. The sauce will reduce and thicken. Watch that it doesn't burn, and add more liquid if necessary. Baste occasionally to glaze the meat. Let the meat rest for 5 minutes before serving.

Lovely tasty , tender pork chops ! I had no apple juice in so i used apple sauce, it work beautifully. I used DeJon mustard and did cut back on the brown sugar, just a teaspoon full. My chops were very thick so they did take longer to finish in the oven, about 35 minutes. We liked the flavours in this very much and will be making them again, thanks for posting.
