"German Potato Salad is a favorite of mine...my mom made it quite often. This recipe satisfies my taste buds for German Potato Salad plus it's an easy all-in-one meal."

Step by Step Method

Step 1

In a large saucepan, cover the potato cubes with water and boil for a few minutes until tender. Drain well. In a large skillet, saute kielbasa and onion in oil until onion is tender. Add potatoes; saute 3-5 minutes longer or until kielbasa and potatoes are lightly browned.

Step 2

Combine the brown sugar, vinegar, mustard, thyme and pepper; stir into skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. Add spinach and bacon; cook and stir until spinach is wilted.

Super Duper Delicious! Another easy, tasty meal from Gkwillow...your recipes are a new favorite in our home. I made this with turkey kielbasa, 1T Splenda brown sugar blend, German delicatessen mustard and 3 strips of thick bacon. I overboiled my potatoes a bit, so I didn't get the browning, but it tasted really good. I can't figure out what the 3T of water is for? That's not enough for a pound of potatoes? Next time, I think I'll microwave my potatoes. I let the spinach sit in the pan too long too, so it over wilted...I would recommend dishing it up right away or transferring it to a serving bowl. I was worried there wouldn't be enough sauce but it coated the potatoes nicely so we got yummy flavors in every bite. Freddy Cat says thanks for the meal! Made for the Billboard recipe tag game.
