"This is a lovely concentrate I like to keep in the refrigerator during the summer months. It makes a nice refreshing drink. I just mix it one to one with water or sparkling water. It also makes for a tasty alcoholic summer drink by adding vodka. I use half a cup of concentrate, half a cup of sparkling water and 1 oz. vodka. "

Step by Step Method

Step 1

Puree strawberries in a blender.

Step 2

In a large sauce pan, combine strawberry puree, lemon juice and sugar.

Step 3

Heat to 165 degrees Fahrenheit, stirring occasionally.

Step 4

Do not allow to boil.

Step 5

Pour into glass bottle or jar and refrigerate.

Great summer drink! I made this with half regular sugar/half coconut sugar and it made a lot of concentrate. It tasted a lot like strawberry jam. I can see this being very good with vodka, but I didn't have any so tried it with water and club soda. I also used some in smoothies and iced tea. 1 to 1 ratio makes for a very thick drink...I think I used more of a 1 to 4 ratio for my tastes. This does primarily taste of cooked strawberries, the lemon flavor got lost. Made for the Billboard recipe tag game.
