Step by Step Method

Step 1

Heat a large pot.

Step 2

Add all of the ingredients except the salt and pepper, cook over high heat, shaking the pan and stirring occasionally, until the mussels open about 7 minutes.

Step 3

Season lightly with salt and pepper.

Step 4

Discard the bay leaves and serve right away with crusty bread.

I scaled this back for 500 grams (1 lb) of mussels and scoffed the lot it was just so good and soaked up the broth with some crispy garlic bread and what was left just drank it up delicious, served with a side salad as a main meal, thank you TeresaS, made for Pick Me tag game.
