"I make this using Greek feta although it can be made with a sharp cheese such as kefalotyri or sharp cheddar cheese or a mild cheese like anthotyro or farmer's cheese. Since I love spicy foods I add in cayenne pepper if you like some heat then go ahead and add it in"

Step by Step Method
Step 1
Rinse the spinach well under cold water to remove any dirt. Add to boiling salted water and cook until wilted (about 3 minutes) Drain well. When cool enough to handle take small amounts of spinach in hand and squeeze out all excess liquid. Chop finely.
Step 2
Soak 1 1/4 cups fresh bread cubes in a small amount of water, then squeeze to dry as much as possible.
Step 3
In a mixing bowl combine spinach, salt, pepper, garlic, bread crumbs, 1 whole egg, and egg yolks. Add butter, feta cheese and chopped onion. Mix well until thoroughly blended. Taste the mixture and add in more salt and/or pepper if needed.
Step 4
With a fork, mix the eggs whites with 1 teaspoon of water.
Step 5
Shape the mixture into balls then flatten slightly. Dip them in the toasted crumbs, then into the egg whites, then into toasted crumbs again.
Step 6
Fry in hot oil until browned, and drain on absorbent paper towels.
