Ingredients

The ingredients are:
  • 3 1/2 pounds fresh baby spinach
  • 1 egg, lightly beaten
  • 2 egg yolks
  • 2 tablespoons of butter, softened
  • 1 1/4 cups fresh bread cubes, fairly packed
  • 1 small onion, finely chopped
  • 1/2 cup crumbled feta cheese
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon of freshly ground black pepper, or to taste
  • 2 garlic cloves, minced
  • 2 egg whites
  • 1 teaspoon water
  • Toasted bread crumbs (or crushed zwieback) for coating
  • Olive oil for frying

How to Make

  • Step 1: Rinse the spinach well under cold water to remove any dirt. Add to boiling salted water and cook until wilted (about 3 minutes) Drain well. When cool enough to handle take small amounts of spinach in hand and squeeze out all excess liquid. Chop finely.

  • Step 2: Soak 1 1/4 cups fresh bread cubes in a small amount of water, then squeeze to dry as much as possible.

  • Step 3: In a mixing bowl combine spinach, salt, pepper, garlic, bread crumbs, 1 whole egg, and egg yolks. Add butter, feta cheese and chopped onion. Mix well until thoroughly blended. Taste the mixture and add in more salt and/or pepper if needed.

  • Step 4: With a fork, mix the eggs whites with 1 teaspoon of water.

  • Step 5: Shape the mixture into balls then flatten slightly. Dip them in the toasted crumbs, then into the egg whites, then into toasted crumbs again.

  • Step 6: Fry in hot oil until browned, and drain on absorbent paper towels.
