Step by Step Method

Step 1

Heat oil in a 6- to 8-quart heavy saucepan or Dutch oven over medium high heat. Add onion, garlic, basil, and red pepper flakes. Cook, stirring occasionally, for 3 minutes, reducing heat if onions begin to brown.

Step 2

Add wine and water, increase heat to high, bring to a boil, and cook 1 minute. Add tomatoes and mussels; cover and cook until mussels open, 6 to 8 minutes. Serve hot.

I do a lot of mussels for our Sunday appetizer and this recipe will be going into my favourites. I cut the recipe back to 1 lb mussels (2 servings), used Marsala wine, kept the garlic at 3 cloves & used a dozen frozen grape tomatoes instead of canned tomatoes. Recipe served with sliced Baguette bread.

I scaled this back for 1 serve and used a eschallot for the onion and 1/2 a large tomato (chopped) for the canned tomato and made as per recipe and my mussels only took about 3 to 4 minutes to open. Once I had eaten my mussels I enjoyed the soupy both and was wishing I had some crusty bread to dip in the soup, thank you Sknymini, made for Alphabet Soup tag game.
