Step by Step Method

Step 1

In a pot on medium high heat bring the water to a rolling boil. Reduce heat to low and add the coffee, piloncillo (or brown sugar) and cinnamon stick. Simmer fro 10 minutes, stirring occasionally, then turn off the heat and let sit, covered for 5 minutes.

Step 2

Strain through a fine sieve or cheesecloth and serve.

Step 3

(***alternatively, remove the cinnamon stick and pour the drink into a French press, press down on the plunger and serve).

Step 4

Can be made a couple of hours ahead, covered, in the pot, reheat before serving.

Chocolate Spice Mexican Coffee Follow the same instructions as the original recipe, but add 2 tablespoons of cocoa powder and 2 tablespoons of dark chocolate chips when adding the coffee, piloncillo (or brown sugar), and cinnamon stick. Simmer for 10 minutes, stirring occasionally, then turn off the heat and let sit, covered for 5 minutes. Strain through a fine sieve or cheesecloth and serve.

I needed an afternoon pick-me-up and this was the tastiest way to do it. I LOVED this coffee. It's easy to make (I quartered the recipe and used dark brown sugar) and might be the tastiest coffee I've ever made. It's not overly sweet and the cinnamon shines through. A keeper!

This is so yummy! I decided to make mine in the coffee maker. I used two cinnamon sticks, but next time I will only use one. I put the brown sugar in the coffee pot before brewing. So I drank some right away, and the taste was faint. I let it sit in the pot, and the next cup was full of flavor! My husband didn't even add anything to his. If you make this, try letting it sit for a couple hours first. You will be in awe!

Had this coffee this morning and what a great pick-me-up! Really like this concept and I’m making it like this again tomorrow morning. I added an additional cinnamon stick and ran it through my percolator instead and the longer it sat the more delicious it got! Really enjoyed this good cup of coffee. Thank you, Ellie, for sharing.
