Step 1

Score the ham in a diamond pattern.

Step 2

Place a whole clove in each junction of the score.

Step 3

Set aside to come to room temp.

Step 4

Pre heat oven to 350° F .

Step 5

Pour ginger ale into a roaster with a lid to the 2 inch level

Step 6

Add the pepper corns, Juniper berries, crushed red pepper flakes and Bay leaf to the ginger ale in the roaster.

Step 7

Make a paste with the mustard powder , beer and flower. ( you may not need all the beer for the paste).

Step 8

Save excess beer to add as cooking.

Step 9

Cover top of ham wih this paste.

Step 10

Place ham in roaster with the liquid and seasonings.

Step 11

Place lid on roaster and place in oven.

Step 12

Cook 18-20 minutes per pound. The internal temperature should be 140°F when finished cooking

Step 13

Check liquid level in roaster and add ginger ale and leftover beer to maintain a 2 inch level.

Step 14

Remove from oven when finished cooking and let rest for about 15 minutes before removing to carve.

Step 15

Carve and enjoy.
