Step by Step Method

Step 1

Heat (2 1/2-3 cups) oil to deep fry. If possible use a heavy cast iron frying pan.

Step 2

Wash fish and pat dry.

Step 3

Lightly season fish with salt and pepper. Set aside.

Step 4

In a medium bowl combine seasoned salt, pepper, paprika and onion powder.

Step 5

Add flour and meal to seasoning mixture. Mix well.

Step 6

Dip fillets in egg, then in cornmeal mixture. Wait 10 minutes, then coat fish again with cornmeal mixture.

Step 7

Deep fry fish until golden brown on each side. The cooking time depends on thickness of fillets. Smaller fillets will cook sooner than larger ones.

Step 8

Drain on paper towels, and serve immediately.

We love fish and have it at least once a week. This was too good to pass up. The fish tasted great and we loved the flavor of the coating! When we want fried fish, this will noe be my recipe to use.

Catfish is always eaten with glee round these parts. We love em nice and crispy and golden brown. I added some cajun spice into the flour mix for a little pazazz and we ate till out guts bout split! Had some fried green maters on the side too.

Finally a batter that actually sticks to the fish. I'm giving this 5 stars for flavor plus the fact that the batter stuck to the fish, I used catfish this time next time I'll try it with a different fish. Thanks for a great recipe and a great find Luv2Kook!

Finally got to try this recipe. Very good. I could not use catfish but I did use tilapia. Didn't quit deep fry because I don't have a deep fryer but i did use a deep cast iron skillet. Worked great. I think this one will be a great fish fry recipe! Wanted to take a couple pics but batteries were dead. Thanks for posting!
