Step by Step Method
Step 1
In a lrg heavy pan, place the water, milk, butter, lemon rind & salt over med-heat & bring to a boil.
Step 2
Add the flour & stir w/a wooden spoon until the flour becomes a soft dough which turns into a ball shape & separates from the sides of the pan. (This is similar to a basic Choux paste that is used for baking eclairs & cream puffs)
Step 3
Remove the dough from heat & place in a med bowl. Let the dough cool for a few min. Beat in 1 egg at a time making a smooth batter.
Step 4
Heat the oil to 365 degrees. Shape the dough into rd doughnuts using 2 lrg tablespoons.
Step 5
Fry the dough by 4-5 pieces at time until golden brown while keeping the heat at a steady temp.
Step 6
Pierce the sonhos slightly as they cook. Drain on a new clean brown paper bag or paper towels.
Step 7
While still hot, roll the sonhos in a mixture of sugar & cinnamon.
