Step by Step Method

Step 1

Cook noodles according to package directions; drain; rinse; drain again.

Step 2

In a bowl whisk together the chicken broth with the next four ingredients (-five-spice powder).

Step 3

Heat a wok or large skillet over medium high heat. Add the lamb and cook until browned (2-5 minutes); stirring to crumble meat. Remove lamb from pan with a slotted spoon and set aside.

Step 4

Return pan to medium high heat and add oil to the drippings in the pan. Add the cumin and red pepper flakes; cook 30 seconds until the seeds start to pop. Add vegetables (-carrots) and the chicken broth mix; cook 5 minutes, stirring frequently. Add lamb cook another minutes or so until liquid is reduced.

Step 5

Serve over the noodles.

I did all the prep before cooking and this came together very quickly. Love the flavour of the sauce, but found that it needed a wee touch of salt, so used soy sauce. Reduced the red pepper flakes to 1/2 tsp which is perfect for us. And had to sub the snow peas for sugar snap peas. We both thoroughly enjoyed this and will be made again for sure. Scaled this back for 2 serves and the DS and I thoroughly enjoyed this spicy dish. I couldn't get lamb mince/ground but picked up some heart smart very lean lamb steaks on special and processed them in the food processor to make my mince. The only change I would make next time is to remember to add a touch less red pepper flakes as mine, which was given to me by my neighbour which she makes herself is super hot.
