Place the roast in the marinade overnight ( at least 6 hours ) in fridge.
Take roast out of marinade and drain..
Let sit at room temp for 1 hour.
Meanwhile get the smoker ready for a 3 - 4 hour burn with apple wood.
Smoke until internal temp reaches 135°F.
Remove roast from smoker and wrap in foil.
Place back in smoker for an hour, temp should reach 145°F.
Remove and let rest for an hour.
Slice and enjoy!
