  • Salt and pepper to taste

How to Make

  • Step 2: Place the roast in the marinade overnight ( at least 6 hours ) in fridge.

  • Step 3: Take roast out of marinade and drain..

  • Step 4: Let sit at room temp for 1 hour.

  • Step 5: Meanwhile get the smoker ready for a 3 - 4 hour burn with apple wood.

  • Step 6: Smoke until internal temp reaches 135°F.

  • Step 7: Remove roast from smoker and wrap in foil.

  • Step 8: Place back in smoker for an hour, temp should reach 145°F.

  • Step 9: Remove and let rest for an hour.

  • Step 10: Slice and enjoy!
