"This is one of many variations but its an easy one. This was enjoyed by everyone and we used bread to dip into the bottom of the bowl. Another tasty soup for the crockpot!"

Step by Step Method

Step 1

In a 6- to 8-quart slow cooker, whisk together the stock, wine and tomato paste until the paste dissolves. Stir in the tomatoes, vinegar, garlic, oregano, onion powder, red-pepper flakes and salt. (If you are using unsalted stock, add an additional 1/2 teaspoon salt.) Add the chicken and stir to combine. Cook on low until the chicken is very tender and the flavors are blended, 5 to 6 hours.

Step 2

Increase the heat to high for 10 minutes. Coarsely shred the chicken with two forks, pressing pieces of chicken against the side of the slow cooker to break the thighs apart. Stir in the spinach so that it wilts into the soup.

Step 3

Stir in the tortellini, cover the slow cooker, and cook until the tortellini are al dente and warmed through, about 3 minutes. Taste the soup and add salt if it tastes flat. Ladle the soup into bowls and serve with Parmesan, basil and black pepper.

This was a big hit in my house, although I made a few minor (I think) changes. I used chicken breast, as we prefer white meat. It actually came straight out of the freezer, so it took a little longer to be shreddable. Instead of oregano, I chose to use dried basil. Other than that, I stayed true to the recipe. I served this with some toasted garlic bread, which made it a truly hearty meal.

Simple and good. I made a smaller amount in my 1-quart crock pot and it worked really well. Thanks for sharing, Marra.

Daily Inspiration

Easy and delicious. I had to use chicken breasts so I cut them into 2-3 inch slices and once done, I shredded them as directed. Next time I will use chicken thighs as they are my favorite. I added a little Italian seasoning and more salt because my tomatoes were "no salt added". Truly one of those fix it and forget it until just before it's done. Will be serving with some cornbread muffins. Definitely a repeat at our house. : )

Thoroughly awesome soup! Great textures and flavours. To the last bowls added a splash of heavy heavy cream and a dollop of pesto which we love. Thank you for another keeper recipe! Made for Billboard Recipe Tag.
