"Soba noodles are thick Japanese noodles made from buckwheat that are long like spaghetti. This is quite tasty, I added in some tofu if your not a vegan you could add in cooked chicken or shrimp"

Scaled back for 1 very generous serve (and oh according to my packet directions 3 minutes to cook the noodles in boiling water UNSALTED) so it made for a really fast and easy side which I thoroughly enjoy. My only mistake was to add the full amount of chilli flakes which would have been okay if I was using a commercial blend but I was using my neighbours home made blend and it is super hot and normally only add half a recipe calls for but forgot in this case but oh it was still oh so good, thank you Kittencal for a great side.
