Step by Step Method

Step 1

Heat olive oil over medium high heat, using about 3 tablespoons. Add the onion, garlic and mushroom slices, cook for 3-4 minutes or until mushrooms are softened. Remove to a small bowl.

Step 2

To the same skillet, add the chicken and cook for 7-8 minutes on each side until not pink in the middle.

Step 3

Add the spinach and saute for about 3-4 minutes.

Step 4

Add the onion mixture back to the skillet. Set aside.

Step 5

Prepare the alfredo sauce mix according to package directions.

Step 6

Cook pasta in boiling water until aldente. Rinse under cold water and drain.

Step 7

Add the alfredo sauce and cooked pasta to the skillet, toss together with the mushroom mixture.

Step 8

Add salt and pepper to taste.

Step 9

Top with Parmesan cheese.
