Ingredients

The ingredients are:
  • 4 chicken breasts, boneless, skinless (cubed, or chicken thighs, cubed)
  • 1 onion, small (chopped)
  • 2 garlic cloves, minced
  • 1 cup mushrooms, sliced
  • 2 to 3 cups spinach, fresh (well-packed leaves)
  • Alfredo sauce (one 4.5 ounce package dry mix, Knorr brand is good)
  • 2 to 3 tablespoons pesto (prepared)
  • 8 ounces pasta, dry (penne pasta or similar)
  • Parmesan cheese

How to Make

  • Step 1: Heat olive oil over medium high heat, using about 3 tablespoons. Add the onion, garlic and mushroom slices, cook for 3-4 minutes or until mushrooms are softened. Remove to a small bowl.

  • Step 2: To the same skillet, add the chicken and cook for 7-8 minutes on each side until not pink in the middle.

  • Step 3: Add the spinach and saute for about 3-4 minutes.

  • Step 4: Add the onion mixture back to the skillet. Set aside.

  • Step 5: Prepare the alfredo sauce mix according to package directions.

  • Step 6: Cook pasta in boiling water until aldente. Rinse under cold water and drain.

  • Step 7: Add the alfredo sauce and cooked pasta to the skillet, toss together with the mushroom mixture.

  • Step 8: Add salt and pepper to taste.

  • Step 9: Top with Parmesan cheese.
