Step 1: Heat olive oil over medium high heat, using about 3 tablespoons. Add the onion, garlic and mushroom slices, cook for 3-4 minutes or until mushrooms are softened. Remove to a small bowl.
Step 2: To the same skillet, add the chicken and cook for 7-8 minutes on each side until not pink in the middle.
Step 3: Add the spinach and saute for about 3-4 minutes.
Step 4: Add the onion mixture back to the skillet. Set aside.
Step 5: Prepare the alfredo sauce mix according to package directions.
Step 6: Cook pasta in boiling water until aldente. Rinse under cold water and drain.
Step 7: Add the alfredo sauce and cooked pasta to the skillet, toss together with the mushroom mixture.
Step 8: Add salt and pepper to taste.
Step 9: Top with Parmesan cheese.
