Simple Sweet and Sour Pork
"We first tried this simple dish many years ago, so I'm guessing it was passed on by a friend. Over the years, however, it has been modified to increase and vary the vegetables and simplify the process, so I'm calling it a family project recipe. Those are the ones that start with good comments and then move quickly to "what if we added . . . ." Step by Step Method
Step 1
Heat the shortening in a skillet large enough to keep the pieces of pork separate while they brown. Add pork and brown quickly but do not cook completely since they will continue to cook in the next steps.
Step 2
While the pork is browning (or before you start), stir together the next six ingredients: vinegar, brown sugar, cornstarch, chicken stock/broth, soy sauce, and ketchup.
Step 3
Stir the liquid mixture into the browned pork and simmer until it bubbles and begins to thicken.
Step 4
Stir in pineapple, bell pepper, onion, and carrots.
Step 5
Simmer for 6-10 minutes, until the carrot slices are cooked.
Step 6
Serve over hot rice.
