Step by Step Method

Step 1

Bring a large pot of water to a boil and add 1 tablespoon salt and 1 tablespoon olive oil and cook past according to package directions; drain and return to pot; cover to keep warm.

Step 2

Put a large deep skillet on medium high heat and add 1 tablespoon oil and 1 tablespoon butter. Add asparagus with 1/4 teaspoon salt and 1/8 teaspoon pepper and cook uncovered for 5 minutes or until crisp tender, stirring occasionally; remove from pan.

Step 3

In the same pan add 2 tablespoons oil and 2 tablespoons butter and then add the garlic and cook stirring for a minute. Add shrimp and season with 1 teaspoon salt and 1/4 teaspoon pepper; cook stirring for about 5 minutes or until shrimp is pink.

Step 4

Stir in the lemon juice parsley and lemon zest; stirring to combine. Turn off heat and return pasta and asparagus to pan; toss and place in bowl to serve.

Worthy of more than 5 stars! I made a half batch and it was eagerly devoured!! The asparagus were perfect after 5 minutes. I did not use any butter - only garlic infused olive oil. To serve, I put the shrimp and asparagus on top of the tube pasta, then sprinkled with some chopped grape tomatoes. Going in my "best of" file!
