Ingredients

The ingredients are:
  • 1/2 pound spaghetti or your favorite pasta
  • 1 pound asparagus, trimmed and cut into 2 inch pieces (I used frozen asparagus)
  • 3 tablespoons butter, divided
  • 3 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1 pound shrimp, peeled and deveined
  • 1 1/4 teaspoons sea salt, divided
  • 1/4 teaspoon black pepper
  • 1/4 cup lemon juice
  • 1/3 cup parsley, chopped
  • 1 tablespoon lemon zest

How to Make

  • Step 1: Bring a large pot of water to a boil and add 1 tablespoon salt and 1 tablespoon olive oil and cook past according to package directions; drain and return to pot; cover to keep warm.

  • Step 2: Put a large deep skillet on medium high heat and add 1 tablespoon oil and 1 tablespoon butter. Add asparagus with 1/4 teaspoon salt and 1/8 teaspoon pepper and cook uncovered for 5 minutes or until crisp tender, stirring occasionally; remove from pan.

  • Step 3: In the same pan add 2 tablespoons oil and 2 tablespoons butter and then add the garlic and cook stirring for a minute. Add shrimp and season with 1 teaspoon salt and 1/4 teaspoon pepper; cook stirring for about 5 minutes or until shrimp is pink.

  • Step 4: Stir in the lemon juice parsley and lemon zest; stirring to combine. Turn off heat and return pasta and asparagus to pan; toss and place in bowl to serve.
